 Easy Vegetable Fried Rice !
This is a guest post by my dear friend Reshu.... whom i know through My buddy Indu.. 
Ingredients

1 Cup Cooked Rice
1 Cup of Mixed Vegetables chopped (carrots, peas, French beans, capsicum)
1 Small bunch of Celery stacks
1 Small bunch of Spring Onion, chopped
1 Onion sliced
2 tsp of soya sauce
1 tsp of green chilli sauce or hot sauce.
2 tsp of tomato ketchup
1 tbsp of ginger + garlic paste
1 onion sliced
1 tsp of black pepper
1-2 tbsp of oil
Cloves
Cinnamon

Heat oil and add sliced onion, cloves and cinnamon.
Saute until onion is light brown.
Add ginger and garlic paste and saute for 2-3 minutes.
Add the finely chopped vegetables and celery mix well. Cook for another 5 minutes.
Add the soya sauce, tomato sauce and green chilli sauce.
Fry on high heat until the sauces bubble and reduce flame to medium-high, stirring constantly.
Continue to stir- fry for another 2-3 minutes.
Add the cooked rice and stir well to combine.
Check for salt and add more if required.
Finally add some pepper powder and spring onions.
Stir well and turn off flame.

Vermicelli Upma


Ingredients:
Vermicelli
1 cup
Channa dal
2 tbsp
Mustard seeds
1 tbsp
Mixed vegetables (Carrot, beans, peas)
1 cup
Onion
½ chopped
Curry leaves
Few
Salt to taste

Green chillies
2 chopped

Method:
1.       Dry roast vermicelli and keep it aside.
2.       In a pan, heat oil, splutter mustard seeds.Add channa dal and curry leaves.
3.        Saute onion, green chillies, add the mixed vegetables and water (2 times vermicelli). Cover and cook the vegetables.
4.       Once done, add salt to it. Then add the fried vermicelli to this mixture and cook till it becomes soft.



 



5.       Garnish with coriander leaves.

Pepper Mutton Fry


Mutton is one of few I cook very rare these days. Yet I wanted to make something quick and tasty with it. And to my surprise it came out well. My husband also liked it very much.
Ingredients:
Mutton
250 gms
Onion
1 thinly chopped
Pepper corns
Whole 2 tbsp
Fennel Seeds
1 tbsp
Salt to taste

Curry leaves
Few
Mustard seeds
1 tbsp
Coriander leaves
To garnish

Method:
1.       Clean mutton pieces and chop them into small pieces. Pressure cook it with little water and turmeric powder and keep it aside.    
2.       Grind pepper corn and fennel seed to coarse powder.
3.       In a pan, heat oil, splutter mustard seeds. Add chopped onion and curry leaves and sauté them well.
4.       Add the ground mixture and fry till raw smell goes. Finally add the cooked mutton pieces and fry till all combine well.
5.       Check for salt and garnish with coriander leaves.
Tips
Adding chopped garlic and ginger is optional. I have added it in dish but have not put in recipe.

Sura Puttu/ Scrambled Fish Fry


I was watching all the episodes of Kitchen Superstar of vijay tv. Whenever the contestants got a chance to cook fish, atleast one was there making sura puttu. I got a craving to taste it. I was not able to get shark fish for doing it. I replaced it with salmon. It tasted very good. So here is the recipe.
Ingredients:
Salmon Cutlet
2(around 1 kg)
Onion
1 chopped finely
Garlic 10 cloves
Chopped finely
Ginger
½ quantity of garlic chopped finely
Green Chillies
3 chopped finely
Chilli powder
1.5 tbsp
Coriander
¾ tbsp
Pepper powder
1 tbsp
Cumin seed
1 tbsp
Mustard seeds
1 tbsp
Curry leaves
few
Turmeric powder
½ tbsp

Method:
1.       Clean the cutlet and cook it with little water and turmeric powder. Once cooled, remove the flesh of fish alone.
2.       In a heavy bottomed pan, heat oil (I use gingelly oil for making any fish curry). Splutter the mustard seeds. Once done, add the cumin seeds and curry leaves.
3.       Then sauté onion, garlic,green chillies and ginger pieces.Add the scrambled fish. To avoid burning, you can sprinkle some water.
4.      Add all the masala powders and fry for another 5 mins till everything gets mixed well


 


 





5.       Check for salt. Serve hot with rasam or sambar rice.

Sardines in Tamarind sauce/ Chaalai meen puli kulambu

I had a craving to have fish. I just went to fish market without having idea of what I am going to make. I saw sardines in the shop, at once I remembered Amma’s fish curry. Sardines in tangy tamarind sauce.
Ingredients:
Sardines
500 gm
Tamarind
Lemon size soaked in hot water.
Shallots
5 or 6
Garlic
4 or 5 gloves crushed
Tomato
1 chopped
Chilli powder
1 tbsp
Coriander powder
1 tbsp
Turmeric powder
½ tbsp.
Salt
To taste
Curry leaves
A few
Mustard seeds
1 tbsp
Green chillies
2 or 3 slit lengthwise

Method:
1.       Clean the sardines and keep it aside
2.       In a pan, heat oil and splutter the mustard seeds. Add the curry leaves, green chillies,garlic and onion and fry till it becomes transparent.
3.       Then add the chopped tomatoes and fry till it becomes mushy.
4.       At the same times, take tamarind juice. Mix all the masala powders to the tamarind extract, add to the pan and allow the sauce to cook.
5.       Once it starts boiling, add sardines and cook fish. Allow the curry to thicken a bit.
6.       Serve hot with rice

Carrot Halwa

This was my guest post for "Shyama's tastes". Thought of sharing it for my readers too. Making carrot halwa was my long time dream. Finally I made it and here is the recipe.

Ingredients:
(Serves 2)
Carrot
3 or 4 cups grated
Sugar
½ to ¾ cup
Milk
2 cups
Condensed milk(optional)
3 tbsp
Cardamom
4
Nuts(almonds,cashew,pista)
3 or 4 tbsp
Raisin
2 tbsp
Ghee
3 tbsp
Salt
A pinch

Method:
1.       In a heavy bottomed pan(I used pressure cooker bottom) , heat a tbsp of ghee and fry the nuts and raisin and set aside.
2.       In the same pan, heat rest of the ghee and add the carrot gratings and fry for a second. Then add 2 cups of milk and allow the carrot to cook.

3.       Keep the flame on low or medium. Once all the milk has evaporated, add condensed milk, sugar, pinch of salt and cardamom(I powdered sugar and cardamom in a mixer).

4.       Keep stirring till it gets a bit dry and consistency as of halwa. Garnish with nuts and raisin. Serve warm. Happy eating

  

Notes:
·         If you are adding condensed milk, reduce the amount of sugar you are adding.
·         Adding raisin is also optional. Some people may not like it in halwa.

Milk Peda

This was the guest post by my long time buddy Saranya Bhubesh who is my best friend ever since we were in school. She got a passion for cooking and a person to experiment. What else is the qualification to become a better cook.(lol). I am happy that she accepted to make a guest post for me when I asked her. And here is the first one from her kitchen. Enjoy!!

Ingredients required to make this 3 minutes Milk Peda are listed below.


Ingredients Quantity
Milk Powder 1 Cup
Condensed Milk 100gms
Butter 2 Tablespoon
Ghee 1 Tablespoon
Salt Pinch

1)In a microwave bowl, first melt the ghee and butter together. This is done to add taste to Peda as well as to grease the microwave bowl to make the Peda's non sticky.




2)Once the butter and ghee are melted, put the Milk powder and condensed milk together and mix it well.




3)Microwave this mixture for 1 minute. After 1 minute remove the bowl from microwave and again stir the mixture.
 
4)Again microwave the mixture for 1 minute and after that take out the bowl and stir it.
5)Now add a pinch of salt to this mixture and again microwave for 1 minute.
6)Now the mixture is cooked well and it should be of the consistency of making peda.
7)Yummy Peda is ready.
8)You can make the peda's in ur desired shape using shape cutter or make it as balls.
9)If you are not diet conscious, you can even decorate the peda with pista or badam.
11)If you dont take out the bowl and stir it for every one minute, mixture will get burnt. So be sure to take out the bowl for every one minute.
10)You can make upto 20 balls of peda in the quantity mentioned.
