Vegetable Cutlet

Today's evening time snack was Vegetable Cutlet. I added just carrot, beans and potato. But you can put your creativity and add as much types of vegetables you want. Its crunchy and crispy out but soft and spicy inside.


Ingredients:
Carrot - 2 medium
Beans - 20
Potatoes - 3 medium sized
Onion - 1 chopped
Coriander leaves - a bunch chopped
Green chillies - 2 chopped
Ginger and garlic - chopped 1 tbsp each
Turmeric powder - 1/4 tbsp
Chilli powder - 1 tbsp
Saunf/Perunjeeragam - 1 tbsp
Garam masala powder - 3/4 tbsp
Salt to taste and oil to deep fry
Bread crumbs and maida as needed

 Method:
Chop the vegetables, boil and mash the potatoes and set it aside

Heat some oil in a pan.
Add some saunf to the oil and let it get roasted a bit
Then add the chopped green chillies, ginger and garlic.
Add the chopped onions once the garlic and ginger gets cooked
Add all the other vegetables except potatoes
Add all the masala powders and salt and give a good mix
Finally add the mashed potatoes and give a good mix.
At the same time, mix some maida with water and make a smooth batter.
Get ready with bread crumbs as well.
Let the stuffing get cooled.




Make small balls out of the mixture and flatten it into shapes you want.
Dip it in the batter on both sides to form like a layer.
Then dust it with bread crumbs

Get ready with everything like this.

Deep fry in oil and drain excess oil on kitchen towel.
Yummy cutlet is ready. Serve with any sauce you like.
