Red Chutney with Cashewnuts
I have already posted the white chutney with roasted gram dal here .. Now I am going to share the recipe of Red chutney with Vathal Milagai and Cashew nuts. I have added a bit of tamarind for tanginess. Its also a quick chutney recipe.

Coconut Chutney
This is a very basic recipe which most of us will know. This is just my cookbook so just making a quick note of how to make it is added here. This is like instant chutney which doesnt need any work over stove except tempering.
Ingredients:
Cocunut - 1 cup
Roasted gram - 1/4 cup
Ginger - 1 inch piece
Salt to taste
To temper:
Oil
Red chilly dried - 1
Mustard seeds - 1/2 tbsp
Urad dal - 1/2 tbsp
Curry leaves - a spring
Method:
Grind everything in a blender to smooth or coarse paste as how you want. Then take everything in a bowl. Heat oil in a pan and add items under to temper, then add it to the ground mixture. Serve with dosa, chutney or aapam.

Tomato-green chilli thokku
Ingredients
Tomatoes-3 to 4 ripe ones
Green chillies- 2 to 3 chopped finely
Coriander leaves
Chilli powder-1 tbsp
Asafetida-a pinch
Salt to taste
Oil
Mustard seeds
Curry leaves
Method
*heat oil and add the mustard seeds,curry leaves and asafoetida
*then add the tomatoes and green chillies chopped finely and fry till it it turns mushy
*then add the coriander leaves and fry for a sec then add salt and chilli powder and again fry for a while
*then add about a cup of water and allow to simmer for some time say about 10-15 mins
*serve hot with idli or dosai

Ingredient
Peanut-1cup
Garlic-1 flake
Red chillies-4 to 5
Tamarind-a small pea size
Salt to taste
For seasoning
Curry leaves
Asaefotida
Mustard seeds
Sesame oil
Method
•dry roast the peanut without burning and allow it to cool
•then grind it along with other ingredients to a smooth paste by adding water
• then heat oil in a pan and add the seasoning items and mix it along with the ground mixture

Onion-Tomato Chutney
Ingredients
small onion-8 to 10 roughly chopped
Tomato-2 roughly chopped
Coriander-few
Salt
Chilli powder-1.5 tbsp
Asafoetida- 1 tbsp
Method:
1.Fry oil in a pan and heat the asafoetida
2.Then add the chopped onion and fry.Then add the chopped tomatoes and fry till it becomes mushy
3.Then add the chilli powder and salt and fry till the raw smell goes
4.Then add the coriander leaves and leave the mixture to cool.
5. Grind the mixture roughly in a mixer grinder.
To Temper.
Heat oil in a pan and fry the mustard seeds,1 tbsp urad dhal and few curry leaves.Then add this to the ground mixture and mix it well
