Vegetable Cutlet

Today's evening time snack was Vegetable Cutlet. I added just carrot, beans and potato. But you can put your creativity and add as much types of vegetables you want. Its crunchy and crispy out but soft and spicy inside.

Maavu Ladoo with nuts

This is a healthy snack recipe specially for kids as it is made from whole wheat flour and nuts along with ghee. This post is specially for my friend Shalini who asked for some snack recipe for her son.

Ingredients:
Whole wheat flour - 2 cups
Sugar - 1.5 cup (depends on how sweet you want)
Nuts - 1 cup (I used almonds and cashew)
Elaichi powder - 1/2 tbsp
Salt - a pinch
Ghee as needed

Ulli/Vengaya Vadai/Onion Vadai

When I think of this Ulli vada/Onion vada, I remember my childhood days when appa used to buy this for our evening snack, I love to eat this and have a hot sip of tea. This particular snack can be made in minutes unlike some snacks that need soaking grinding sort of pre preparations. Just chop the onions, add besan and chilli powder, make a batter, deep fry them. You get crispy Onion vadai :)

Chilli Paneer

Chilli Paneer is a indo chinese dish. The taste comes from the sauces we add. The procedure is very similar to gobi manchurian or chilli chicken except that we add fried paneer here. It can be had as a snack or as a side dish for fried rice.

Oma Podi

When I have Oma Podi, I can't stop munching them. I scanned through the Indian Shops for this one. I was not able to find the one we get in my native :(. So I decided to make my own one. Hurray it was a success. Just follow the quantities list, it will never go wrong.

Rava Ladoo

I made this rava ladoo for Gokulashtami today. Even if I have made it so many times before, I felt like it came out perfect this time.


Ingredients:
Rava - 1 cup
Sugar - 1 cup
Cardamom - 3 or 4
Ghee as needed

Method:
Dry roast rava till it gets roasted. Powder rava once its cooled.
Powder the sugar along with cardamom.
Take all the dry ingredients in a mixing bowl.
Add ghee and make the powder into small balls. Enjoy :)

Rava Paniyaram

This paniyaram is a solution to your sudden craving for something sweet. This is easy to make and the ingredients are readily available most of the time.
Ingredients:
Maida - 1 cup
Rava - 1 cup
Rice flour - 2 tbsp
Jaggery - 1 cup (you can replace with sugar)
Salt - 1 pinch

Method:
Mix all the dry ingredients first, then add the jaggery and enough water to make to a dosa batter consistency.( I made a jaggery syrup to remove impurities, so just used the same)
Heat oil in a pan and once the oil is hot enough, pour a laddle full of batter into the oil, wait for a min, it will raise and come above, then flip the other side.
Keep the flame in medium to cook the paniyaram perfectly. Do the same with rest of the batter.

Medhu Vadai

I love medhu vadais with chutney and sambar while maams like paruppu vadai. Today morning I decided to make it finally. I soaked some urad dal yesterday. To my surprise the medhu vadais today was awesome, it was crispy outside and soft inside. Here comes the recipe. The batter is best when ground in wet grinder. I dont have one.. So just made it using mixie.
Ingredients:
Urad dal - 1 cup
Ginger - 1 inch piece chopped finely
Onion - 1 chopped finely
Green chillies - 2 chopped finely
Curry leaves - few chopped
Salt as needed
Oil to deep fry

Method:
Drain off the water completely from soaked dal and start grinding it. The batter decides the quality and texture of vada.
If the batter becomes too watery it will absorb oil, so make sure you add water drop by drop. I just added 3 tbsp of water. (If using mixie, use the pulse function, it works best)
Add the rest ingredients only when you are ready to make vada as onion may ooze out water and make the batter watery.
Keep a bowl of water on side, each time you shape vada dip your hands in water first
Take a small ball first, pat on your hand, dip your thumb in water and make hole in centre and deep fry them(see pic)
Keep the flame in medium and fry so the vada will get cooked inside as well.
Serve with coconut chutney and sambar :)

Pottukadalai/Roasted gram Murukku

I had a sudden craving for snack today. Not willing to invest much time to prepare a snack, I was thinking of a recipe which requires very less time. now coming to the recipe, this one is easy and can be done in short time. The number of ingredients you need is also less.

Ingredients:
Rice flour - 1 cup
Roasted gram - 1/3 cup
Oil / butter - 2 tbsp
Jeera - 1 tbsp
Hot water - as needed
Salt - to taste
Oil to deep fry

Method:

1. Grind the roasted gram to a fine powder.
2. In a broad vessel, take the rice flour, the gram powder, salt, jeera and oil and mix well.
3. By adding the hot water, mix and make it into a lump free dough.
4. Take the idiappam maker, change the mould to any shape you want. I used the star shape one.
5. Fill the maker with dough and start pressing the dough on the back of laddle or on a plastic cover.
6. Heat the oil and start dropping the dough into oil and cook on either side till it becomes golden color.
7. Drain on a paper towel and store in a air tight container once cooled.




 Notes:
Keep the remaining dough covered with wet cloth as it tends to get dry.

Two minute microwave cake







Ran out of snack at home!!!!. This will help you if you have an microwave oven at home. I have tried this recipe many times. Here comes the recipe
Ingredients:
All purpose flour / Self raising flour
1 cup
Sugar
½ cup
Salt
A pinch
Egg
1
Vanilla Essence
¼ tbsp.
Cup to bake the cake

Butter or oil
2 tbsp

Method:
1.       Take a bowl and mix the flour, sugar and egg and mix well without any lumps.
2.       Take a microwave safe cup, heat little butter or oil and then take the mixed batter in a cup (half a cup).
3.       Keep it in the oven and bake for 2.5 mins or 3 mins. Take only half a cup batter because it raises as it gets baked.
4.       Allow to cool a bit and have it. Sometimes it turns rubbery if you leave it for long.



Note:
Adding vanilla essence is optional. If you don’t like the egg smell, add only egg whites.

Roasted gram Laddu

Ingredients:

Roasted gram- 1 cup
Sugar - 1/2 cup (depends on your taste)
Cardamom - 2 tbsp
Salt - a pinch
Ghee - 1/2 cup
Cashew nut - 2 tbsp

Method:
1. Grind the roasted gram to a fine powder


2. Then grind the sugar and cardamom together to a fine powder and set aside.


3. Heat ghee in a pan and fry the cashews till they become golden brown, then fry the roasted gram powder. Then add the powdered sugar and fry again. Allow it to cool down. When its warm roll it into small ladoos. If not able to roll add some more ghee.
