Vegetable rice

Basmati rice- 1 cup
Mixed veg(carrot,beans,peas)-1 cup
Pepper powder-1tsp
Onion-1 cut length wise
Tomato-1 cut length wise
Salt to taste
Ginger garlic paste-1tsp

To temper:
Saunf-1 tsp
Bay leaf
Elachi -1

To garnish:
Coriander leaves,spring onions

1.soak basmati rice for at least 15 mins
2. Fry oil in a pressure cooker and add the items under to temper.then add the onion and fry till it becomes transparent
3.then add the tomatoes and fry till it becomes mushy,then add the mixed veggies and fry for a min.
4.then add a cup of water and salt to taste and pepper powder and wait till it boils
5.then add the rice and close the lid of the cooker.cook on low flame for 10 mins.
6. Once the pressure is released add the items under to garnish .
7. Mix it lightly such the rice doesn't get mushy.serve with any raita or chilli paneer(recipe coming soon)
