Potato Roast with dry fenugreek leaves

Fenugreek leaves are very good for health and as very flavorful ingredient. When you make this roasted potatoes, we can either use fresh leaves or the dried methi/fenugreek leaves.
Potatoes - 3 (peel the skin and chop into cubes)
Fenugreek leaves - 2 tbsp
Turmeric powder - a pinch
Chilli powder - 1 tbsp
Garam masala - 1 tbsp
Salt to taste
Mustard seeds - 1 tbsp
Jeera - 1 tbsp

Heat oil in a pan. Add jeera and mustard seeds. Once it splutters, add the potatoes and start frying in low flame.
After few mins, cover and cook the potatoes for 5 mins or until cooked.
Then add the masala powders, salt and fenugreek leaves and cook till the raw smell goes off. Yummy potato roast is ready.
